When most people think of waterjet cutting, they picture industrial metal and stone fabrication. But one of the fastest-growing applications for abrasive-free pure waterjet technology is food processing — and for good reason.

High-pressure pure waterjet cutting (without abrasive garnet) is now used in commercial production lines to cut bread, cake, fresh and frozen meat, fish, poultry, pizza, confectionery, cheese, fruits, and vegetables with a level of precision, hygiene, and cutting speed that no mechanical blade can match at scale.

The Core Advantage: Non-Contact, No-Contamination Cutting

Every mechanical blade that contacts food is a contamination vector. Blade fouling, microbial adhesion to metal surfaces, and physical cross-contamination between product runs are persistent food safety challenges. The standard response is rigorous sanitation protocols — but cleaning time reduces line availability, and not every cutting geometry is achievable with a blade regardless of how well it is maintained.

Pure waterjet cutting has no blade. The cutting medium is a pressurized water stream — typically at 200–400 MPa — that cuts cleanly through food products without physical contact between a mechanical tool and the food surface. The waterjet stream is:

  • Sterile at source — filtered and treated water enters the pump system; bacteria cannot survive in the ultra-high-pressure stream

  • No cross-contamination path — each cut uses fresh water; there is no blade surface that carries contamination from one piece to the next

  • No mechanical force on the product — soft products (bread, soft cheese, cake) are not compressed or distorted by the cutting tool

  • Programmable geometry — the nozzle follows a CNC-programmed path; any 2D shape is achievable at full production speed

Portioning Precision: Why Weight Consistency Matters at Scale

In commercial food production, every gram of over-portioning is lost profit. A beef portion that averages 10 grams over the target weight across 10,000 units per shift represents 100 kg of product given away. Over a year, this is material cost.

Waterjet cutting systems integrated with inline weight feedback and vision systems can achieve portion weight accuracy of ±1–3% depending on product variability. The CNC system adjusts cut position in real time based on measured weight or scanned product geometry, ensuring consistent portion weight regardless of natural variation in product size.

This precision is not achievable with manual banding saws or standard rotary blade systems where the operator makes cut decisions visually.

Sanitation Design Requirements for Food-Grade Waterjet Systems

A waterjet cutting machine installed in a food production environment must meet significantly different design standards than an industrial metal-cutting system. WONLEAN's food-grade waterjet configurations incorporate the following sanitation design principles:

  • 316L stainless steel frame and all food-contact surfaces — full corrosion resistance, compatible with CIP and COP washdown protocols

  • IP65 or higher electrical enclosure rating — full protection against high-pressure washdown water and steam cleaning

  • No horizontal flat surfaces where product or water can pool — frame design uses angled surfaces and open drain channels throughout

  • Food-safe seals and water path materials — no lead, no copper, no materials that leach into the water stream under ultra-high-pressure conditions

  • Separated clean water inlet and wastewater drainage — wastewater path kept fully independent from fresh water supply throughout the machine

  • Conveyor-integrated cutting table options — product enters on a conveyor, is cut to programmed geometry, and exits without manual handling between cutting stages
